Barszcz is a classic Polish beet soup, known for its vibrant color and earthy, slightly sweet flavor. It is often served with sour cream and sometimes with dumplings or potatoes.
Ingredients
- 4 medium beets, peeled and grated
- 1 onion, chopped
- 1 carrot, chopped
- 1 parsnip, chopped (optional)
- 4 cups vegetable or beef broth
- 2 tablespoons lemon juice or vinegar
- 1 bay leaf
- 2 cloves garlic, minced
- Salt and pepper to taste
- Sour cream for serving
Instructions
- In a large pot, sauté onion, carrot, and parsnip in a little oil until soft.
- Add grated beets and garlic, cook for a few minutes.
- Pour in broth, add bay leaf, and bring to a boil. Reduce heat and simmer for 30 minutes.
- Add lemon juice or vinegar, salt, and pepper. Simmer for 10 more minutes.
- Remove bay leaf. Serve hot, topped with a dollop of sour cream.
