Gołąbki (pronounced goh-WOAM-kee) are classic Polish cabbage rolls filled with a savory mixture of ground meat, rice, and seasonings, then wrapped in tender cabbage leaves and simmered in a rich tomato sauce.
Ingredients
- 1 large head of cabbage
- 1 lb ground pork or beef (or a mix)
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups tomato sauce
- 1 cup beef broth
Instructions
- Carefully remove the core from the cabbage and boil the whole head until leaves are soft. Separate leaves and set aside.
- In a bowl, mix ground meat, cooked rice, onion, garlic, egg, salt, and pepper.
- Place a spoonful of filling on each cabbage leaf, fold sides, and roll up tightly.
- Arrange rolls seam-side down in a baking dish.
- Mix tomato sauce and beef broth, pour over rolls.
- Cover and bake at 350°F (175°C) for 1.5 hours, or simmer on the stovetop until tender.
- Serve hot, topped with extra sauce.
