Gołąbki (pronounced goh-WOAM-kee) are classic Polish cabbage rolls filled with a savory mixture of ground meat, rice, and seasonings, then wrapped in tender cabbage leaves and simmered in a rich tomato sauce.

  1. Carefully remove the core from the cabbage and boil the whole head until leaves are soft. Separate leaves and set aside.
  2. In a bowl, mix ground meat, cooked rice, onion, garlic, egg, salt, and pepper.
  3. Place a spoonful of filling on each cabbage leaf, fold sides, and roll up tightly.
  4. Arrange rolls seam-side down in a baking dish.
  5. Mix tomato sauce and beef broth, pour over rolls.
  6. Cover and bake at 350°F (175°C) for 1.5 hours, or simmer on the stovetop until tender.
  7. Serve hot, topped with extra sauce.
